This grubbing recipe has two names, because it seems that people use both when referring to the same dish. Both Merenge and Merengue appear when searching recipes and both are the same type of recipes. It appears to be a expressio / espresso type of thing.
Now for the recipe!
Ingredients:
- 12 oz sliced white mushrooms
- 1 medium onion sliced
- 2-4 cloves garlic
- 1 can Rotel Tomatoes (brand of diced and spiced tomatoes)
- 16 0z bag of small cocktail shrimp shelled and de-veined
- 2 cups chopped Bell peppers (red, green and yellow)
- 1/4 cup bacon bits or 3-6 pieces bacon chopped
- 1 heaping teaspoon flour
- 1 cup white or brown rice
- 2 tbsp extra virgin olive oil
Directions:
- Saute onion, garlic, peppers in olive oil until they start to soften add mushrooms and continue to saute until mushrooms start to brown.
- add Rotel Tomatoes and simmer about 10 minutes.
- Add shrimp and bacon stirring until ingredients are completely mixed, then simmer another 20 minutes.
- As juices from vegetables and tomatoes build up, add flour by removing a little of the liquid and mixing in a glass then pouring back into the pan.
- Serve over rice, or as an alternative pasta.
